Winter Citrus Salad

I seldom look forward to colder temperatures but do love the foods associated with winter. There is nothing better than a gloriously colorful citrus salad to precede a dinner of a hearty, rich stew paired with a warm pilaf.

Oranges and lemons are believed to have originated in the southeast foothills of the Himalayas near the state of Assam, India, Northern Myanmar and Southern China. The history of the spread of citrus reads like a romance novel. Even during ancient times, the mere appearance of beautiful citrus trees, along with the aroma and taste of the fruit, elicited poetic mentions in written narratives.

Use a combination of any of the citruses you prefer for this salad — and leave the cheese out for a plant-based version and/or add chickpeas braised in salt, pepper and dried ginger.
