My fascination with cookies is decades long — from the first time in the 1980s when I tasted a warm gooey chocolate chip Mrs. Field’s cookie at an airport, I was hooked.

Over the years, I’ve learned that the best way to enjoy cookies super fresh is to have a cookie-dough stash in the freezer. Going from freezer to oven helps maintain their shape and prevents them from spreading too much, and the inside remains soft and delicious.

These date cookies make for a quick snack and are even great for breakfast with coffee or chai. They satisfy the sweet craving without a heavy sugar dose. The maple syrup sweetens them just right, but if you like your cookies sweeter, feel free to add sugar.
