Curried Black-Eyed Peas & Eggs on Toast

The tradition of eating beans or a curry on bread is one that the British brought to India — and one that my family adopted with great fanfare. When fresh roti was unavailable, we threw dal, beans, even vegetable or meat curries on bread that was sometimes toasted, other times kept soft to absorb the sauce.
